We work with trusted regional abattoirs , keeping livestock journeys as short as practical and ensuring the meat is handled with care. Lamb and mutton are then expertly prepared to make the most of their natural qualities, whether that means the delicate flavour of younger lamb or the deeper, more developed character of mature mutton.
