  • Sand Sole is a rare coastal treasure, a delicate flatfish with a subtle flavour reminiscent of Dover Sole. Its firm, fine-flaked flesh carries a gentle sweetness, a true reflection of the North Sea waters it comes from. Not always guaranteed at market, these exceptional fish are a seasonal delight. Supplied with the skin removed, but retaining the head and bones.

  • Place on a lightly greased baking tray. Cook in a preheated
    oven at 180 degrees Celsius for around 15-20 minutes until piping hot.
    Alternatively, cook on the hob on medium heat with a
    generous knob of butter for around 10-15 minutes.

  • Keep Frozen.
    Defrost before cooking. Place in the fridge overnight.
    Alternatively place into cold water for around 30-60 minutes.
    Once defrosted, consume within 3 days.
