  • Shoulder, hand-cut into robust chunks with a small amount of fat kept in for flavour. The shoulder gives naturally open grain, which is why the pieces stay tender.

  • Slow-cooked dishes where the pork breaks down over time: curries, casseroles, stews, tagines, ragus. It holds its shape and stays succulent rather than turning stringy.

  • Slower-grown pigs carry more natural marbling and firmer muscle, both of which stand up to long, gentle cooking. Commodity pork tends to dry out or shred into fibres.
