Bacon like it used to taste. I cook it in the Aga and save the rendered fat which is pure white and fantastic to use for roast potatoes etc. The bacon crisps up and makes the most wonderful bacon sandwiches you have ever tasted!.

  • Our Traditionally Cured Unsmoked Bacon Lardons are a freezer staple in our household. The perfect addition to so many dishes, from pasta to salad and everything in between.

    Our native breed bacon is traditionally brine-cured and air-dried, creating a wonderful texture that crisps in the pan with just the right amount of fat cover for flavour. Our team of artisan butchers carefully trim the bacon, giving you perfectly sized lardons to be rendered down in all their delicious glory!

  • Place a cold castiron pan onto the hob. 

    To the pan add the bacon lardons and cook until they are beautifully golden and crips and the fat has rendered. 

    You can also pop the lardons into an ovenproof dish and place into a preheated oven set to 190C. Bake for around 15 minutes, until the lardons are golden and crisp. 

  • All of our meat is delivered frozen ready to pop straight into your freezer, once defrosted these can be kept in the fridge for up to 3 days.

  • Small cubes or short strips of bacon cut to a uniform size, ready to fry straight from the pack. Traditionally used to add depth and richness to dishes rather than eaten on their own.

  • Unsmoked lets the natural flavour of the cured native breed pork come through, without the smoke shifting the taste of whatever they're going into. A better fit for things like carbonara or a pale-brothed soup where you don't want a smoky note.

  • The fat is what carries most of the flavour and does the actual work of crisping the meat in the pan. Lean commodity lardons tend to end up dry and rubbery instead.
