  • Our Native Breed Pork Chops are a classic cut that has stood the test of time, this is probably due to the double hit of flavour from buttery fat and dense honeycomb marrow-rich bone, making our Native Breed Pork Chops a sublime eating sensation. 

    Rather unusually we hang all our Native Breed Free Range Pork for at least three weeks, this results in a lingering depth of flavour and firm texture, creating pork that is really special. 

    Due to our pigs Properly Free Range lifestyle and their diverse diet, our pork chops have a wonderful sweetness to the meat and the most incredible rich buttery fat. 

    Our pork chops can vary in shape, depending on where we have cut them from across the loin. 

    This wonderful cut has picked up some of the country's top awards including the prestigious 1 star at the Great Taste Awards.

  • Free Range Pork

  • Get a castiron pan hot. Take the chop and hold it upright with a pair of tongs so that the fat crisps and begins to caramelise.

    Lay the chop on one side and seal the surface. Turn the chop over and do the same on the other side. Turn the heat down to medium and watch carefully until the juices just appear on the surface. Turn over and carefully watch for the same on the other side. As soon as this happens it is cooked.

    Allow to rest for 10 minutes. Whilst this is happening, deglaze the pan with a glass of white wine, cider or best of all cider brandy! Pour over and serve.

  • The bone carries dense marrow that adds a second layer of flavour on top of the buttery fat. Boneless chops lose that dimension entirely.

  • They're cut from across the whole loin rather than a single position, so some are broader, some narrower, some deeper. It's a natural consequence of butchering a real animal rather than a uniform product.

  • Slower-growing pigs raised outdoors on British farms produce meat with genuine depth and much more marbling than fast-grown commercial breeds. The three-week hang firms up the texture and lengthens the flavour further.
