  • Our 100% Grass Fed Beef Brisket is a really hearty, traditional joint that epitomises all that's good about our slow-grown, grass-fed beef.

    Our slow grown Rolled Beef Brisket is perfect for those who enjoy eating fat. Full of character and with a real old-fashioned depth of beefy flavour, our Grass Fed Beef Brisket has a wonderful amount of rich buttery fat, that is ideal for slow cooking to allow the fat to gently render.

    Rolled Brisket responds best to long, slow cooking - this allows the open grain of the meat to relax and become perfectly tender. It also allows the seam of fat to melt away, enriching the gravy and complementing the meat.

    We recommend 5 portions per kg

  • 100% Grass Fed Beef

  • To defrost the Brisket remove from the freezer and leave on your kitchen worktop for one day. Alternatively, place the Brisket in the fridge and allow it to gently thaw for two days.Before cooking, remove the packaging and allow the joint to dry out and reach room temperature. 

    Preheat a fan assisted oven to 140C. 

    Lightly season the brisket joint and place into an ovenproof roasting dish. Add a good glug of wine and a whole pouch of beef stock and cook for a good 4-6 hours, the longer the better. Top up any liquid if needed during this time. 

  • All of our meat is delivered frozen ready to pop straight into your freezer, once defrosted these can be kept in the fridge for up to 3 days.

  • A hearty cut from the lower chest of the animal, well-marbled with fat and traditionally rolled for roasting. A working muscle that carries a lot of flavour but needs time to relax.

  • The open grain and connective tissue only break down properly over hours at low heat, at which point the meat turns tender and the internal fat renders through it. Rushed brisket ends up chewy and dry.

  • Yes, and that's the point. The seam of fat between the layers is where a lot of the depth comes from, enriching the gravy as it melts through. Leaner cuts don't give the same result.
