  • To defrost the braising beef, place into a bowl of cool water (still in its packaging) and leave for approximately 10 minutes. Preheat a fan assisted oven to 150C.In a bowl place a handful of plain flour, lightly season the flour with salt and pepper and toss the braising beef through the flour.Add some Beef Dripping or Ghee to a castiron pot and place on a medium-high heat. Add the braising beef to the pot and carefully brown. Remove the braising beef from the pot and set aside. To the pot add a few halved shallots and cook until soft. Add a small handful of garden herbs, a couple of cloves of garlic, a glass of red wine and a pouch of Beef Stock. Return the beef to the pot and place the lid on top. Move the pot into the oven and cook for 2-3 hours, until the beef is beautifully tender.

  • Braising beef is cut from the chuck muscle on top of the shoulder blade. Because that muscle has done some work, it needs a slow cook of a few hours, after which it becomes meltingly tender with a rich, deep flavour. Ours is 100% grass-fed native breed beef, hung on the bone for four weeks.

  • Toss it in seasoned flour and brown it in a hot pan, then add shallots, herbs, garlic, red wine and beef stock. Cover and cook in the oven at 150C for two to three hours, until the beef is beautifully tender. It's ideal for hearty pies and stews.

  • Yes. It has been awarded the prestigious Great Taste 1-Star Award, recognising its rich, deep flavour and tender texture. It comes from slowly reared native breed cattle.
