  • Fillet has to be one of the most sought-after cuts of beef, famed for its delicate texture that melts like butter. 

    We slow grow our 100% Grass Fed Native Breed cattle to at least 31 months. All our beef is hung on the bone for at least four weeks, this results in sublime eating quality, real texture and depth of flavour. 

    Our Grass Fed Beef Fillet Steak is beautifully fine-grained and with a well-rounded depth of flavour.

    We recommend you cook our Grass Fed Fillet Steak rare and serve with a really good bottle of red wine. 

    Each steak weighs approximately 200g.

  • 100% Grass Fed Beef

  • Melt-in-the-mouth flavour starts with careful prep. Follow these steps for perfect results.

    • Defrost the steak in its packaging in a bowl of lukewarm (not hot) water for about 15 minutes.
      Ready in approx. 15 minutes, depending on thickness.
    • Remove, pat dry with a kitchen towel, and season generously with pure sea salt.
    • Heat a dry cast iron pan until smoking, then sear the steak in the centre for 3 minutes.
    • Flip and cook for 3½ minutes, then flip again and cook for 2 more minutes, optionally basting with butter and herbs.
    • Remove from the pan and rest uncovered for at least 10 minutes to allow the juices to settle and enhance the flavour.

    Serving Suggestion: Enjoy rare, paired with a bold red wine and simple seasonal veg.

  • Fillet is cut from the long muscle running along the sirloin, which does very little work during the animal's life. That lack of use gives it a fine grain and the delicate, buttery texture fillet is famed for. It's one of the most sought-after cuts of beef as a result.

  • We recommend cooking it rare. Grass-fed fillet is fine-grained with a well-rounded depth of flavour, and cooking it rare keeps it at its tender best. Serve it simply, with a really good bottle of red wine.

  • It comes from 100% grass-fed native breed cattle, slow-grown to at least 31 months and hung on the bone for at least four weeks. That combination of slow growing and long ageing on the bone gives real texture and a depth of flavour that faster-reared beef doesn't develop.
