  • Made to a traditional recipe with raw milk, Yoredale is a smooth and creamy Wensleydale.

    Unlike a traditional crumbly Wensleydale, the team at Curlew Dairy use a slower, pre-warm recipe which leads to the smoother, buttery texture. The cheese is clothbound and aged in their maturing room for 3-4 months. The finished product boasts all the lemon yoghurt acidity you'd expect from a classic Wensleydale, with an earthy tone closer to the rind.

    Delicious to enjoy as part of any cheeseboard, this cheese pairs beautifully with fruity chutneys. We particularly enjoy this cheese on a generous slab of fruitcake - just as they would in Yorkshire!

    About the Maker

    Curlew Dairy are a micro dairy based in Wensleydale, producing small batches of traditional farmhouse Wensleydale cheese using local unpasteurised milk.

    The team at Curlew recognised that the key to award-winningly good cheese was truly delicious milk. All their milk comes from a small, local herd of Holstein and Ayrshire cows, who enjoy grazing the lush Yorkshire pasture during the warmer months and haylage through the colder months. This results in a beautiful, subtly sweet milk which is left unpasteurised to truly reflect the 'terroir' of the farm; every aspect of the cows' lifestyle - the weather, the grazing, the season and even the bacteria in the soil - plays a part in the final flavour of this truly special cheese.

  • Usually despatched with 5 days shelf life.

    Store in the fridge at 1-8 C.

    It is necessary to apply a common sense approach to cheese care and respond to the cheese you have in front of you.

    The best option is to keep the cheese wrapped in its waxed paper within a box in the fridge. The container will help to prevent the cheese from drying out and prevent the cheese from absorbing flavours.

    For best flavour, bring to room temperature one hour before serving.
