    At Simpson’s, tradition is everything. Our beef is carved tableside from their legendary silver-domed trolley. A timeless piece of theatre that has defined the dining experience for generations.

    From our farms in Devon to one of London’s most celebrated dining rooms, and now to your home, this is a journey we are incredibly proud of.

    As all our Grass Fed Beef is naturally reared, weights are not absolutely precise.

  • 100% Grass Fed Beef

  • To defrost the Rib of Beef remove it from the freezer and take off all the packaging. Leave it on your kitchen worktop for one day and overnight. Alternatively, place the Rib in the fridge and allow it to gently thaw for 2-3 days.Before cooking allow the joint to reach room temperature and pat dry.  Preheat the oven to 220oC/425oF/Gas Mark 7. Season the Rib of Beef generously with good sea salt and freshly ground black pepper. Place the Beef into a roasting tin surrounded by onions, garlic and a vegetable trivet. Roast at 220oC for 20 minutes, then turn down the oven to 160oC and roast for 30 minutes per kg. Using a meat thermometer, you are aiming for an internal temperature of 50o–55oC for medium rare or 60oC if you like it cooked for a little longer. Rest for 20 minutes in a warm place before carving.

  • Grass-fed means the cattle are reared on grass and forage rather than finished on grain. That slower, more natural rearing gives the beef its deeper flavour and generous fat marbling.

  • Chining is when the butcher separates the backbone from the ribs so the joint carves easily at the table. Edenmoor's rib arrives already chined, ready to go straight in the oven.

  • The cattle are grass-fed on British farms rather than intensively finished, giving that properly beefy depth of flavour with plenty of fat running through the joint. Simpson's in the Strand chose the same beef as their exclusive rib after blind tastings against other suppliers.
