Delicious, simple and a staple of our Christmas dinner. Good amount of goose fat and juices to use for a gravy..

  • Making confit is an ancient practice developed in France as a way of preserving meat such as duck, goose and pork. The process doesn't just preserve the meat; it intensifies the flavour, turning our properly free range goose legs into something rather extraordinary.

Our Confit Goose Leg makes such a special treat - beautifully flavoured with a wonderful melting texture.

Cooking our confit goose leg couldn't be more simple. When it is required, you simply need to free it from its suspended animation in the solid fat and give it a quick crisp in a pan, followed by a 10 minute hot blast in the oven.

The leftover fat can be used to make the best crispy roast potatoes to serve alongside.

One confit goose leg per pack - weighs approximately 400g

As all our free range poultry is naturally reared, weights are not absolutely precise. We recommend 1 portion per leg.

All our Confit Goose Legs are delivered FROZEN.

  • Free Range Goose, Salt, Sugar, Fresh Orange, Bay leaf, Cloves, Star Anise, Cinnamon, Black Pepper, Fennel Seeds

  • Preheat your oven to 180oC/360oF/Gas Mark 4.

Remove the Confit Leg from its packaging, taking off a little of the fat. Keep hold of this fat as you can use it for making the most delicious roast potatoes.

Take a heavy cast iron frying pan and place on a high heat.

Once the pan is smoking hot, place the Leg skin side down. Once the Leg is crispy and golden, remove from the pan and pop in the preheated oven.

Cook for 15 minutes and serve hot.

  • The Confit Leg will arrive frozen and best stored in the freezer until you are ready to cook. Remove from the freezer the day before you plan to cook it and leave it to defrost in the fridge.

  • Confit is an ancient French method of preserving fatty meats by slow-cooking them in their own fat. It preserves the meat and intensifies the flavour at the same time.

  • Free the meat from the solid fat, then give it a quick crisp in a hot pan. Sometimes finished with a short blast in the oven to crisp the skin.

  • Perfect for roast potatoes, where the fat gives them a beautifully crisp exterior and a rich savoury note. Nothing goes to waste.
