  • Our Native Breed Baby Back Pork Ribs make the perfect starter to feed a hungry crowd. We recommend smothering the ribs in a delicious marinade. Our slowly grown, native pork ribs are ideal for nibbling on while you wait for the main event.

    We cut our ribs leaner than the traditional 'American-style' so they are perfect for nibbling off the bone. Our ribs are prepared as a sheet giving you total flexibility to create any recipe.

    Approximately 500g - weights do vary due to the variable size of our pigs

  • Free Range Pork

  • To cook in the oven:

    Preheat the oven to 180C.

    Place the ribs on a good sized baking tray and pour over a delicious marinade (try our smoked BBQ sauce). Leave for as long as you can.

    Pop the ribs into the oven and roast for 40 minutes, you may want to cover the ribs with foil half way through to stop the marinade from burning.

    To cook on the BBQ:

    Light your coals and wait until they have formed a thick grey coat. 

    Place the ribs over the grill away from any direct flame. Keep turning regularly to ensure they don't burn, especially if you have applied a marindade. 

    Cooke for around 25-30 minutes, or until they are beautifully crisp. 

    Slice between the bones and serve.

  • The shorter, meatier ribs from the top of the ribcage where it meets the spine, so-called because they're smaller than spare ribs. More meat on the bone and less fatty than the belly ribs.

  • Cut leaner, with less exterior fat left on. American-style ribs are usually cut fatter and larger; ours are trimmed closer, so you get more of the meat and less of the mess.

  • The rack arrives whole rather than pre-portioned, giving flexibility to split it into individual ribs, pairs or racks as needed. That way it fits any recipe or portion plan.
